Banana Bourbon Waffles
  • 2 1/4 cups all-purpose flour
  • 1/4 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp nutmeg
  • 2 tbsp bourbon
  • 1 cup milk
  • 2 ripe bananas, mashed
  • 2 eggs
  • 1/3 cup olive oil
  • 1 tsp vanilla extract

-Heat waffle iron until hot.

-In a stand mixer, combine the bananas, sugar, bourbon, milk, olive oil, and vanilla. Keep mixer on low.

-Combine dry ingredients. Slowly add to the wet, mixing until just combined.

-Pour batter into greased waffle iron, and cook until golden brown.
